This can be whipped up really fast and using any assortment of vegetables, try adding beansprouts, mushrooms, sugar snap peas or anything else you fancy.

Lentil, Mushroom and Sweet Potato Shepherd's Pie

This is one of my favourites and it was probably my first vegan show-stopper dish that I could serve to friends and family, it has always gone down well. It is packed full of nutritious vegetables and totally made from scratch. This dish can also be adapted based on whatever you've got indoors, I've tried subbing out the mushrooms for kidney beans and adding sweetcorn and peppers (pics below). Try whatever works for you! I can happily eat this on its own but feel free to serve with kale and vegan yorkshires or with a rocket and tomato side salad with balsamic vinegar.

Spicy Butternut Stew

I am really proud of this recipe. I really fancied a Caribbean-style veggie stew, I had butternut squash in the fridge and not much else! I searched for an online recipe but couldn't find what I wanted so I just made this one up as I went along. I initially used 2tsp of lazy chilli which surprisingly gave it the kick I wanted so feel free to replace the fresh chilli with the lazy version! Also, feel free to swap the red pepper for yellow or orange.
