Ackee

As a previous fan of ackee and saltfish, I was pleasantly surprised when a good friend of mine re-introduced me to ackee with this dish.

The red pepper can be switched for orange or yellow pepper and you can make with or without the spinach or dried parsley. In fact, feel free to play around with this recipe and try with different options, it's pretty versatile.

I usually serve with pitta but I've also had with a tortilla or just on its own, either way it's delicious!
