One Tin Butternut Squash and Spinach Curry

This recipe comes from 'The Green Roasting Tin' which is listed as one of my Recommended Recipe Books. This is a very tasty dish and very straight forward. I recommend using a peeler to peel the butternut squash, that can take a little effort but trust me it's worth it! This dish also freezes well. Serve with rice or a naan.
