Lentil, Mushroom and Sweet Potato Shepherd's Pie

This is one of my favourites and it was probably my first vegan show-stopper dish that I could serve to friends and family, it has always gone down well. It is packed full of nutritious vegetables and totally made from scratch.

This dish can also be adapted based on whatever you've got indoors, I've tried subbing out the mushrooms for kidney beans and adding sweetcorn and peppers (pics below). Try whatever works for you!

I can happily eat this on its own but feel free to serve with kale and vegan yorkshires or with a rocket and tomato side salad with balsamic vinegar.
